Addis Ababa rewards a slow start. Mercato in the morning, injera and a dozen wats off one shared platter at lunch, then a ceremony where the beans are washed, roasted and brewed in front of you over an hour. Short trips and long layovers do very well here.

Erta Ale is awake all night.
The depression sits more than a hundred metres below sea level and runs to fifty degrees by mid afternoon, so the trips are built around darkness. Drive in from Mekele in the evening, climb the volcano after sunset, sleep on the rim, and be off the lava field before the heat. Dallol and the salt caravans come on the way out.
The ceremony takes an hour. Take it.
Green beans washed and roasted over charcoal at the table, ground by hand, brewed three times in a jebena and poured with popcorn. Around it sit the Mercato spice stalls, injera with a dozen wats on one shared platter, and classes in home kitchens where you leave able to cook it.
Gorges, crater lakes, a stone bridge.
North of Addis Ababa the plateau breaks into the Jemma and Blue Nile gorges at Debre Libanos, where gelada troops sit along the cliff edge and the Portuguese Bridge crosses a waterfall. South and east there are crater lakes at Bishoftu and Wenchi and stelae fields at Tiya. Every one of them is a same-day trip.
The escarpment runs for forty kilometres.
West of Debark the Simien rim falls away in a line of thousand-metre cliffs, with Ras Dashen standing behind it at four and a half thousand metres. Walkers take two days or ten, camping or in lodges, always with a park scout. Gelada troops, walia ibex and lammergeiers are resident, so the wildlife is not a matter of luck.

A day out of Addis Ababa.
The road north reaches the escarpment in two hours and the road south reaches the stelae fields in less. A monastery on a cliff, a waterfall under a stone bridge, crater lakes you can swim in, and a juniper forest nobody has heard of. Drivers collect from hotels and have you back the same evening.
Nine days, north to south.
You cannot see Ethiopia in a week, but you can see one coherent slice of it. This is the order most first trips settle into, and each leg links straight to the tours that cover it.

Give the altitude a day. The National Museum for Lucy, Mercato for the noise, Entoto for the view back down over the city, and a coffee ceremony in the afternoon while your body catches up with 2,300 metres.
